I was drinking my eggnog coffee that I enjoy during the holidays and was also craving pancakes. I decided I need to try eggnog pancakes.

Sugar of choice
I used Swerve sugar substitute. You can also use granulated sugar, honey or syrup.

eggnog
I use Califia Eggnog creamer or Eggnog

Coconut Oil
Instructions
Heat pancake griddle on medium high heat.
I place my coconut oil on the pan as it heats to return to a liquid.
Combine flour, pumpkin pie spice, baking powder, salt and sugar in a large mixing bowl. Whisk to combine.
Combine eggnog, eggs and coconut oil in a small bowl. Beat with mixer until smooth.
Make a well in the center of the dry ingredients. Add wet ingredients to the dry ingredients and mix until just combined.
Add additional dry ingredients until pancake batter is the desired consistency.
Let the batter rest for 15 - 20 minutes before cooking.
I use this time to clean the kitchen and make bacon and eggs.
Reduce heat of griddle to medium.
Rub coconut oil on the griddle so pancakes don’t stick.
Pour ¼ cup of pancake batter on the griddle for each pancake.
When bubbles pop in the center of the pancake, they are ready to flip.
Cook on the reverse side until golden brown.
Serve and enjoy your Eggnog Pancakes.
