Eggnog Pancakes IngredientsHere are eggnog recipes for your family to enjoy this Christmas. One of my favorite parts of the holiday season is Eggnog. I love eggnog. I love Eggnog Lattes, Eggnog Pancakes and Eggnog Pie.

When Starbucks start their holiday beverages Eggnog Lattes with a touch of oat milk is my favorite holiday drink.

I stock my fridge with Califia eggnog creamer and eggnog. A little bit of eggnog creamer in my morning coffee is delicious. Today as I was laying in bed enjoying my eggnog coffee and I started thinking – what else would be yummy with eggnog?

Grandma Eunice always made eggnog pie as a family Christmas tradition. I have tried to follow her recipe but mine don’t usually come out the same. She had much more experience and perfected her recipe over the years.

I have created a more simplified version of eggnog pie including a ready made crust and store made eggnog. This boy mom is always on the go so I take my shortcuts where I can get them.

This morning I decided to try Eggnog pancakes and they were delicious. I used Whole New Mom’s recipe and adapted it.

I make mine gluten and dairy free. Feel free to use your favorite flour and milk of your choice.

I was drinking my eggnog coffee that I enjoy during the holidays and was also craving pancakes. I decided I need to try eggnog pancakes.

Cook Time 15 minutes

Equipment

  • Kitchenaid Mixer
  • Pancake Griddle

Ingredients
  

  • 3 cups Flour of Choice
  • 2 tsp pumpkin pie spice
  • 4 ½ tsp baking powder
  • 1 tsp salt
  • ¼ cup Sugar of choice I used Swerve sugar substitute. You can also use granulated sugar, honey or syrup.
  • 1 ½ cups eggnog I use Califia Eggnog creamer or Eggnog
  • 2 eggs
  • ¼ cup Coconut Oil

Instructions
 

  • Heat pancake griddle on medium high heat.
  • I place my coconut oil on the pan as it heats to return to a liquid.
  • Combine flour, pumpkin pie spice, baking powder, salt and sugar in a large mixing bowl. Whisk to combine.
  • Combine eggnog, eggs and coconut oil in a small bowl. Beat with mixer until smooth.
  • Make a well in the center of the dry ingredients. Add wet ingredients to the dry ingredients and mix until just combined.
  • Add additional dry ingredients until pancake batter is the desired consistency.
  • Let the batter rest for 15 - 20 minutes before cooking.
  • I use this time to clean the kitchen and make bacon and eggs.
  • Reduce heat of griddle to medium.
  • Rub coconut oil on the griddle so pancakes don’t stick.
  • Pour ¼ cup of pancake batter on the griddle for each pancake.
  • When bubbles pop in the center of the pancake, they are ready to flip.
  • Cook on the reverse side until golden brown.
  • Serve and enjoy your Eggnog Pancakes.
